Robs Ghanaian Chicken Soup (Louis's Grandmothers special recipe)
 
Ingredients : Chicken (bone in Breast is great) *2 Tablespoons Powdered Chicken Stock * Salt * Bunch of Basil * Chilli's to taste * 3cm Ginger * 3 Cloves of Garlic * 1 Large Onion * 3 Tablespoons of Tomato paste * 4 Large Tomatoes METHOD: Place chicken stock, salt, basil, and 3 chillis into large pot.
 
Dice ginger, garlic onion and one chilli in blender and then add to pot as well. Add the Tomato paste and the whole tomatoes and enough water to cover. Bring to the boil and boil for 15 minutes. Take out whole tomatoes, blend then return to pot. simmer gently for around 45 minutes or until chicken is cooked through. Skim off any Fat and serve. Serve with rice or a French stick.
